Common questions

Why does one cup of flour not weigh the same as one cup of sugar?

Flour is light and fluffy with lots of air between the particles, while sugar crystals pack tightly. A spooned and leveled cup of flour weighs about 120 grams; a cup of granulated sugar weighs about 200 grams.
